Bruschetta with tomatoes

There are many kinds of bruschettas - small sandwitches with deadly taste ;) My favourite is the one with tomatoes, garlic, basil and mozzarella!

So for two hungry people you'll need:
a loaf of ciabatta (Italian bread)
3 bigger tomatoes
3-4 cloves of garlic (or according to your taste... we LOVE garlic:)
some basil (the best would be fresh, but dried is also ok)
some splashes of extra virgin olive oil
some black pepper
~300g mozzarella

Slice the bread, put in on a baking tin.
Pour boiling water over tomatoes, let them stay there for some 20 seconds, take them out and easily peel off the skins. Chop the tomatoes and pour into a bowl.
Grate the garlic, break leaves of basil (don't cut them - break them by hand - the aroma will be much better), put in some pepper and splash some olive oil. Mix everything well and put it on the slices of ciabatta.
You can eat your bruschettas like that but I suggest at least putting them into the oven of 200C for 10 min. in order for the bread to become crunchy. But for me, bruschettas with mozzarella are the ultimate good :) So...
Slice the mozzarella (the smaller the pieces the better) and put it on the bruschettas. Put them into the oven of 200C for some 10 min. (or until the cheese is melted). Take the bruschettas out ant let them cool. I love my bruschettas with herbal tea :)
